A few weeks ago I was exchanging recipes with my friend Sara. Sara, who has been living in England for the past year mentioned that she had recently gone vegan and the recipes she had been finding so far had been fantastic. I was intrigued, but wary. I didn’t really have any interest in going vegan, but I also didn’t have anything against trying a vegan recipe. To ease me into it, she sent me this recipe for lasagna wontons.
Okay, I know that cheese isn’t vegan, but I’m from Wisconsin, so I had to add a little cheese to it.
While the recipe took a while, it was actually pretty fun and fairly easy. Plus, I also figured that if it didn’t work out, I had leftovers I could heat up. Luckily I didn’t have to and they turned out great!

A quick note, I made my own cashew walnut cream sauce by boiling cashews and walnuts and then blending them with a cup of the water they were cooking in.
