Red, White, and Blue: Mini Pies

For today’s Red, White, and Blue Week post, I wanted to share a fun recipe that you can make for dessert on the 4th! I’ve always wanted to try mini pies, so when I found this fun recipe, I decided to give it a try. I really wanted to cut out stars for the top, but I couldn’t find my star cookie cutter. I ended up using my heart cookie cutter, but I still think they turned out pretty well! 
Want to make your mini pies even more patriotic? Use blueberry filling for some pies and strawberries for others! Putting them together on a plate will add some fun color to your table!

Ingredients
Pre-made Pie Dough
1 cup blueberries, fresh or frozen
1/2 cup strawberries, fresh or frozen
1/2 cup raspberries
¼ cup sugar
¼ cup brown sugar
2 tbsp cornstarch
¼ tsp Cinnamon
pinch ground nutmeg
1 egg
1 Tbsp water

Directions

1. Roll out the pie dough and cut out small circles to fit inside a mini cupcake tin. I had to experiment with different sizes before I found one I was happy with.
2. Spray the mini cupcake tin with baking spray and put the cut dough inside each of the tins. Stick this in the fridge while you’re making the fruit mix.
3. For the filling you have two options. (1) You can either throw all of the fruit, sugar, spices, and cornstarch into one sauce pan or (2) you can separate the blueberry and strawberry/raspberries into two separate pans and cut the spices/sugar/cornstarch for each in half.
4. Cook the fruit mixture on low heat until the fruit has cooked down and the mixture is thick and bubbly.
5. Place a spoonful of the fruit mixture in each of the crust. Make sure to not fill it past the top!
6. Take the leftover dough and roll it out to create the top crust. I chose to use a mini cookie cutter to cut out heart shapes, but you can make a lattice top or whatever other top you’d like. Just make sure that when you cover the top of each mini pie, you press down on the edges to seal them.
7. Mix together the egg and water in a small bowl. Then, brush it on the tops of each mini pie.
8. Bake the pies at 375 degrees for 20 minutes, or until the tops are nice and golden brown.
