This is a recipe that I found online when I had a sweet potato that I wanted to use as a side for my dinner, but I had no idea what to do with it. This recipe is for two sweet potatoes, though in the picture we used 4 and doubled the recipe.
2 Sweet Potatoes
2 tbsp olive oil
2 tbsp honey
1/2 tsp salt
1/2 tsp cinnamon
1. Preheat the oven to 350 degrees F
2. Peel and cut the sweet potatoes into 1 inch pieces and place in a 9×9 dish (or whatever size you feel is adequate)
3. In a separate container, mix together the olive oil, honey, cinnamon and salt. Pour this mixture over the potatoes and stir until all of the potato pieces are adequately coated. I normally like to pour half of the sauce, stir it, and then pour the other half.
4. Bake for one hour. Make sure to stir the potatoes every 15-ish minutes until the potatoes are tender.
As a side note, when I make it for myself, I normally use only one potato and cut the olive oil and honey in half, but use the same amount of salt and cinnamon.
