Once it gets cold, one of my favorite things to do is bake desserts in my apartment. Not only do I then have cookies to eat, but my apartment smells wonderful. A lot of the cookies that I’ve made lately have been passed off to my co-workers, but I decided to make this batch for the Sweet and Spark party Monica and I hosted last week (full post on Tuesday!). These holiday cookies were a big hit with the guests and a perfect holiday cookie. They’re very easy to make, so I would definitely suggest whipping up a batch of these for your next holiday party.
Cookies
2 eggs
1/3 cup of vegetable oil
1 box of chocolate cake mix
1/3 bag of mini chocolate chips
Frosting (from How Sweet Eats)
2 cups powdered sugar
1 1/2 tablespoons unsalted butter, softened
3 tablespoons evaporated milk
1/4 teaspoon vegetable oil
1/4 teaspoon vanilla extract
1/4 teaspoon peppermint extract
Topping (Optional)
4 crushed candy canes
Edible glitter
To make the cookies
1. Combine all ingredients into a bowl.
2. Once all the ingredients are mixed use 1/2 tablespoon to scoop out the dough onto a cookie sheet.
3. Refrigerate the cookie dough for at least 30 minutes, overnight if possible. (Note, the dough must be scooped out into individual cookies before refrigerating.)
4. Pre-heat the over to 325
5. Once the dough has been refrigerated, take out your cookie sheets and press each cookie down to flatten it slightly (I used a fork to do this).
6. Bake cookies for 8 minutes.
7. Remove the cookies and leave to cool.
Frosting
(I suggest making this while the cookies are baking)
1. Mix all ingredients together and beat until smooth.
2. Frost the cookies once they’ve cooled.
Topping
1. Mix candy canes and glitter together.
2. Sprinkle the mixture on top of the frosted cookies.
These are beautiful! I think that I need to give them a try.
