On the weekdays, my breakfast is all about what’s quick and easy but on the weekends, I like to branch out and try new recipes. Two ingredient pancake recipes have always intrigued me, but I hadn’t picked out one to try yet. When I came across this one in The Skinny Confidential Book, I figured it was time to try one out. It’s so easy to whip together, I’ll probably be making it a lot more often.
Ingredients
½ cup ripe banana, very mashed
2 eggs
1 heaping tbsp/10 g flaxseed (optional)
Coconut oil cooking spray
Optional: pumpkin spice, cinnamon or berries (I chose to try blueberries)
Directions
1. Mix banana and eggs in a bowl. Add 1 heaping tbsp/10 g of flaxseed if you want your pancakes to really hold together well.
2. Heat a skillet to medium heat and spray with coconut oil cooking spray.
3. Scoop a bit of batter (think the size of a tennis ball for one pancake) onto the skillet and cook until the edges are dry. Note, you want your pancakes to be thin, they’ll be easier to flip and cook well.
4. Cook each side until it’s golden brown. Top with your favorite pancake toppings (maple syrup for me) and enjoy!
